Oh my goodness, I understand what you mean about the eSIM. I probably looked at some people that way, when I first heard about it.
I believe you just need to activate WiFi Calling on the device. For an Android:

Sprint has to send the provision to my device, therefore telling my device "i see u have the feature, & now you can use this feature on this network" that way i can turn it on in the *#*#4636#*#* menu (as posted above) in order to see it on the user interface side.
HD voice is another topic as well
I'm not seeing it set up for the Pixel 3 XL, just the 3a/3a XL. There are currently no other devices in transition.

That list is not continuously updated. This being said, other than seeing the list, i have debunked all avenues that the reps have taken due to their lack of capabilities. I spoke to one yesterday that said he knew exactly what i was talking about and yes it can be done but he didnt have the permissions set forth to do so and needed to escalate the issue.
The list was updated on July 22, 2019. As far as I know, the phone has to receive an update to allow VoLTE to work. It hasn't been scheduled yet.
I understand the frustration and the need to utilize the services. Unfortunately, if you're not already seeing the ability to turn it on, then you'll have to wait for the update that provides the service.
