When looking at a different plan under my account, I'm not given the plan option to change to the Unlimited Plus plan. I'm currently under the Unlimited Freedom v35 plan. I'm trying to change to the Unlimited Plus. But I'm only given the option to change to the Unlimited plan, which doesn't include everything in the Plus plan.
Then I also want to add my husband on as a second line (he is currently under an AT&T plan) to the Unlimited Plus plan, is there a clear cut/easy way to change his current phone/number over onto my account/plan? (His current cell# shows as available to transfer, under the main page for people trying to change service).

You are changing to the right plan. You will just want to add the services that the Plus has through change service options. For you adding your husband to your line, you will call or chat into our specialist who can get the port started for you.
Ok, that sounds simple enough. I won't see added costs though for the additional added features? I want to ensure after I do all that, I'll still be paying the price shown on the main plan page which is 65$ (less $5 for autopay).
For Unlimited Basic it is $65 for line 1. For Unlimited Plus it is $75. Those aren't counting for the auto pay discount. Let me go ahead and get you into PM. I can help with plan change.
